Pizza or spaghetti sauce (homemade)
This recipe came from the cookbook called ?The Crazy Lady Cookbook? Written by Trish Jenkin. It is a great recipe for bottling. You can use it for Pizza sauce, spaghetti sauce or a sauce to use over chicken and pasta. It is an Italian Red Sauce.

8 cups finely chopped onions
16 cloves minced garlic
2 cups vegetable oil
12 quarts chopped tomatoes
12 cups Tomato paste
1/3-cup salt
1/2-cup sugar
1 ? Tablespoons pepper
1/3 cup dried oregano
1/3 cup dried basil
1/3 cup dried parsley
16 bay leaves bundled and tied together with string

1). Brown the onion and garlic together until they are soft and golden.
2). Add the remaining ingredients to the mixture. Reduce the heat and simmer for 2 hours, stirring occasionally, until the sauce has thickened.
3). Discard the bay leaves.
4). Place the sauce into quart canning jars. Wipe the top of the jars. Use lids and rings that have been boiling in water for 5 minutes. Place them on the jars and seal.
5). Place 7 quart jars of sauce with the tight fitting lids in a hot boiling water bath for 45 minutes. This gives them time to cook and process.
6). Lift the jars out of the pot and set them on a towel on the counter. The lids will make a popping sound as they seal.
This recipe will make 16 quarts of sauce
